Delicious and satisfying pound cake. It is gluten-free, low GI and high protein.
Ingredients (2 pound cakes):
Tofu 270g
Almond Powder 200g
Beet Sugar 100g
Olive Oil 70g
Soy Protein 40g
Raisins 100g
Water 100ml
Eggs 4
Directions:
1. Separate eggs into white and yolk.
2. In a bowl, beat egg whites with hand blender mixing in 50g of beet sugar until firm. Refrigerate when done.
3. In a separate bowl, mix olive oil, egg yolks, and the rest of beet sugar.
4. Add tofu, soy protein, water, and raisins to "3". Mix thoroughly.
5. Add almond powder 1/3 at a time and mix well.
6. Mix "2" into "5". Try to keep the melange fluffy (This is important).
7. Place "6" into baking pans.
8. Bake in oven heated to 180C for 30min.
9. Punch holes into the cake with knife or skew.
10. Bake in oven heated to 160C for additional 50min.
The mix makes 2 full size ponds or 4 small size pounds.
